Ortaya konan ististikler, insan\u0131n et yeme a\u015fk\u0131na do\u011frudan veya dolayl\u0131 bi\u00e7imlerde kurban giden bu hayvanlar\u0131n ortadan kalkmas\u0131n\u0131n an meselesi oldu\u011funu g\u00f6steriyor. \u00d6yle ki ya\u015fam alanlar\u0131n\u0131 veya do\u011frudan kendilerini bu h\u0131zla t\u00fcketmeye devam edersek her 5 megafauna \u00fcyesinden 3\u2019\u00fcn\u00fcn nesli t\u00fckenecek. Bu da ekosistemler \u00fczerinde say\u0131s\u0131z zincirleme etkiyi beraberinde getirecek. Peki bu gidi\u015fata dur demenin bir yolu var m\u0131? Di\u011fer bir deyi\u015fle, et yememek m\u00fcmk\u00fcn m\u00fc?<\/span><\/p>\n<p><b>Et yemek ya da yememek<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Asl\u0131nda cevap evet de olsa hay\u0131r da olsa kabul edilmesi gereken bir ger\u00e7ek var: Uzun vadede et yemekten vazge\u00e7mek zorunda kalabiliriz. Zira Birle\u015fmi\u015f Milletler ve Amerikan Kimyac\u0131lar Toplulu\u011fu\u2019nun verilerine g\u00f6re 2050 itibariyle karn\u0131 doyurulacak insan say\u0131s\u0131 9,6 milyara \u00e7\u0131kacak; bu da hayvanc\u0131l\u0131k oran\u0131n\u0131n %73 art\u0131r\u0131lmas\u0131 anlam\u0131na gelecek. Mevcut d\u00fczeydeki hayvanc\u0131l\u0131\u011f\u0131n sera gazlar\u0131n\u0131n %15\u2019inden sorumlu oldu\u011fu ve 1 kg et \u00fcretimi i\u00e7in 15.400 litre suya ihtiya\u00e7 duyuldu\u011fu g\u00f6z \u00f6n\u00fcnde bulundurulursa 20 y\u0131l sonra et t\u00fcketiminin maliyeti s\u00fcrd\u00fcr\u00fclebilir olmaktan iyice uzakla\u015facak. Tam da bu sebeple Google\u2019\u0131n e\u015fkurucusu Sergey Brin\u2019den Bill Gates\u2019e ya da Twitter\u2019\u0131n kurucular\u0131 Biz Stone ve Evan Williams\u2019a, ete alternatif \u00fcretmeye \u00e7al\u0131\u015fan ara\u015ft\u0131rma-geli\u015ftirme \u00e7al\u0131\u015fmalar\u0131 gelece\u011fe yat\u0131r\u0131m yapmak isteyenlerin g\u00f6zlerini dikti\u011fi bir alana d\u00f6n\u00fc\u015ft\u00fc. Hatta en son 6 \u015eubat\u2019ta Washington DC merkezli Good Food Institute, geleneksel ete alternatif \u00fcretmeye \u00e7al\u0131\u015fan 14 projeye toplamda 3 milyon dolar hibe edece\u011fini a\u00e7\u0131klad\u0131. Bunlardan sekizi bitki tabanl\u0131 proteinlerle, alt\u0131s\u0131 laboratuvar ortam\u0131nda \u00fcretilen etlerle ilgili \u00e7al\u0131\u015fmalar. Peki geli\u015fmeler umut vaat ediyor mu? Hem evet hem hay\u0131r\u2026<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Evet, \u00e7\u00fcnk\u00fc laboratuvar ortam\u0131nda yeti\u015ftirilen et konusunda, i\u015flemin ilk ba\u015far\u0131l\u0131 sonu\u00e7 verdi\u011fi 2013 y\u0131l\u0131ndan bu yana \u00e7ok mesafe kat edildi. Maastrich \u00dcniversitesi\u2019nden damar biyolojisi konusunda uzman Mark Post\u2019un inek k\u00f6k h\u00fccrelerinde yola \u00e7\u0131karak yapt\u0131\u011f\u0131 laboratuvar hamburgeri o zamanlar biraz pahal\u0131ya malolmu\u015f, 250 bin Euro kadar tutmu\u015ftu. Bug\u00fcn 140 graml\u0131k lab-burgerin maliyeti 500 Euroya kadar d\u00fc\u015f\u00fcr\u00fclebildi. \u0130nce bir dilim laboratuvar etini ise 50 dolara \u00fcretmek m\u00fcmk\u00fcn. Post\u2019un yapay etinin tad\u0131nda da ilerlemeler oldu. Kas h\u00fccrelerinden elde edildi\u011finden hi\u00e7 ya\u011f i\u00e7ermeyen lab-burger biraz yavand\u0131. \u015eimdilerde doku m\u00fchendislerinin en b\u00fcy\u00fck u\u011fra\u015f\u0131 ya\u011f h\u00fccrelerini tetikleyerek veya h\u00fccrelerin beslenip b\u00fcy\u00fct\u00fcld\u00fc\u011f\u00fc k\u00fclt\u00fcr ortamlar\u0131n\u0131 zenginle\u015ftirerek lezzet a\u00e7\u0131s\u0131ndan ger\u00e7ek ete daha yak\u0131n bir tada ula\u015fmak. Bitki proteinlerinden elde edilen etler tam da bu sebeple, sahip olduklar\u0131 s\u00fcngerimsi tat y\u00fcz\u00fcnden ayn\u0131 derecede ilgi \u00e7ekmiyor. Ara\u015ft\u0131rmalar inek, domuz, bal\u0131k gibi yayg\u0131n t\u00fcketilen hayvanlar\u0131n kaslar\u0131ndan t\u00fcretilen ve doku m\u00fchendisli\u011fi marifetiyle ya\u011f h\u00fccreleriyle birle\u015ftirilmeye \u00e7al\u0131\u015f\u0131lan yar\u0131-yapay etler \u00fczerinde yo\u011funla\u015f\u0131yor.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Bir nevi h\u00fccre tar\u0131m\u0131 olarak nitelendirilen bu geli\u015fmelerin yeterince umut vaat etmedi\u011fini d\u00fc\u015f\u00fcnd\u00fcren etkense, para.
